As you know this year’s competition is to prepare ‘one traditional dish from your locality using locally available ingredients’ – select a dish which is traditional from where you stay or belong so that you know exactly how to prepare the dish and what all precautions, ingredients and other steps to follow while cooking it.
Unlike the previous years, this year we would like to share, with you the judging criteria or parameters so that you can select and prepare the best and the very popular as well as traditional dish and share the video with recipe. Knowing the parameters in advance will help you to try to score better marks as well. Hence all the best for all of you.
The judging parameters are as follows: –
Total marks 100. Number of parameters or judging criteria 6.
Parameters 1 to 5 – 15 marks each, 15 x 5 = 75 and parameter 6 – 25 marks.
75 + 25 = 100.
- Authenticity of the dish: – How original and traditional the dish is.
- Use of ingredients: – What all the ingredients you are using, is there any ingredient or ingredients which are available only in your country, state, province or locality. No wastage or excess use of ingredients.
- Presentation: – How the dish should be traditionally presented like in a special dish or vessel like a Hundi for Dum Biryani, Paella for Spanish paella dishes, Tagine for Morocco dish, or wrapped in a banana leaf, turmeric leaf or vine leaf or served on a banana leaf etc or with a particular accompaniment or side dishes to go along with it. (The side dishes or accompaniments can be already prepared and kept and the preparation of the same need not be shared in the video as these are not judged or assessed)
- Quantity: – As food should not be wasted as far as possible prepare only 2 portions and serve or present only one portion of the dish. If you have to present the entire dish, as individual portions cannot be served, you can do so. Maximum 4 portions could be prepared if that is the minimum quantity in which the dish could be prepared and presented.
- Difficulty and Skills: Difficulty and the level of skill required in preparing the dish. If there is any particular skill required in shaping, folding, cutting, cooking or other similar skills etc.
- Dish Info: The most important is explaining the dish about its importance, history if any, significance or other factors and WHY you have selected this particular dish for the competition.
